Can You Substitute London Broil for Beef Round

What is London broil?

Most people mistakenly think London broil started as a cut of meat when it's actually a type of preparation. The term refers to meat that marinates and then sears or broils at high heat. After years of popularity, some grocery stores sell top-round steak under the name "London broil" since it's suitable for this cooking style after tenderizing.

What type of meat do you use for London broil?

Top-round steak, sometimes sold as "London broil" or topside, or flank steak, are the traditional cuts of beef used for London broil since they take well to marinades.

How do you cook London broil?

You make a marinade for the meat—ours is olive oil, lemon juice, garlic, and Worcestershire—and let it soak up the flavor for at least an hour and up to overnight. Preheat the broiler when ready to cook, and scrape off garlic from the steak (it'll burn under the high heat). Broil on a sheet pan then let rest for 10 minutes before slicing against the grain.

Can I skip the marinade?

Please don't. The top round cut comes from a muscle used for movement toward the back end of the cow. Muscles used for movement are generally leaner and less tender, meaning that they benefit from marination or tenderization before cooking. This marinade has acidic lemon juice and Worcestershire sauce to help break down tougher fibers in the meat.

How can I get it perfectly medium-rare ?

Whether you're a beginner or a seasoned pro, a probe thermometer is your best friend when it comes to cooking whole cuts of meat. They take a lot of the guesswork out of the cooking phase, leaving you to worry only about what sides you'll be eating. Use a thermometer with at least a 4-foot cable or if you're feeling fancy, invest in a Bluetooth thermometer. Before placing the meat under the broiler, insert the thermometer at a 45° angle into the thickest part of the meat. Adjust the oven to the center rack when you're ready to broil. If your oven has a direct flame broiler, monitor the meat more closely, checking after the first few minutes.

Can this be grilled?

Totally! Grilling has become an equally popular method for preparing a London broil. Start the steak on the hot side of the grill to get a good sear on the outside, then move the steak to the cooler side of the grill to let it finish cooking. Again, let the thermometer be your guide to the desired doneness, and don't forget to rest before slicing!

Is the herb butter necessary?

Not at all. The steak is flavorful and satisfying on its own. But, of course, butter makes everything better. To make it sliceable for the steak, place the softened butter onto a sheet of plastic wrap or parchment paper and roll it into a log shape before chilling.

What can I serve with London broil?

Obviously, roasted potatoes are a natural pairing. But if it's nice out, we highly recommend grilled potatoes. Of course, something hearty with a lot of bright flavors and crunchy textures, like our farro salad, would also be delicious.
